One of the greatest gifts the Spaniards left we Latinos, besides having raped and conquered their way to create our civilization, is the tortilla española! It’s like an omelet, but better! Here’s a good recipe.

I usually also include some manchego and some meat or seafood in mine. The perfect pans for tortillas are the Wms. & Sonoma fritatta pans. Pricey but they work well.
